Cheese Spinach and Jalapeño Omelette
  1. Using a bowl, whisk together the egg whites, yolk, San Marcos jalapeño peppers, onion and salt until the ingredients are integrated.
  2. In skillet with lid using an oil-spray, add the mixture, covering the bottom in the form of an omelet, cover with the lid and let it cook.
  3. Add the spinach and cheese halfway to one end, using a spatula fold half the tortilla and let it cook until ready.
