  1. Blend the San Marcos chipotles with the garlic to make a paste, if it looks too thick add a little orange juice.
  2. Salt and pepper to the fish, coat both sides of the fish with the chipotle paste.
  3. Heat the oil over medium high heat, Cook to your desired degree.
