Mango Chicken Cheese Tortillas
Sprinkle chicken with Iberia adobo seasoning. Add extra virgin olive oil on a pan to grill chicken over medium heat for 6-8 minutes on each side.
In a small bowl, mix yogurt, lime zest, Iberia lemon juice, salt and pepper.
Finely chop the chicken and move it to a small bowl. Add in mango and onion.
Grill tortillas over medium heat for 2-3 minutes,
Top with chicken mixture and blue cheese.
Grill for additional 2-3 minutes or until bottoms of tortillas are lightly browned.
Drizzle with yogurt mixture and sprinkle cilantro.
Cut each tortilla into 4 wedges and serve.
